Why are prices falling so sharply in some countries?

Store beetroot fresh
Beetroot must be harvested before the first frost. So that you can enjoy the winter vegetables for as long as possible, you should store the tubers in a cool place – either in the cellar or in the refrigerator. If you want to store beetroot in the cellar, knock out a wooden box with plastic wrap and fill it halfway with damp sand. Then add the beetroot and fill the rest of the box with sand. Many people associate Christmas with special aromas and scents. That’s why I chose a mix of stewed vegetables in season. Earthy beetroot slices and carrots, accompanied by roasted onions, mushrooms and small potato halves, in a cloud of aromas of thyme, cinnamon, cardamom, clove and plum jam. Millet with coconut milk and cardamom goes with the oven vegetables.

Ingredients for 2 people:
1 beetroot approx. 250 g
4 small waxy potatoes with a smooth skin
250 g of brown mushrooms
250 g carrots
3 medium-sized onions approx. 150 g
3 high tbsp plum jam
2 to 3 thyme stalks
Salt, freshly ground black pepper
For the seasoning oil:
1 teaspoon dried thyme
1/2 teaspoon cinnamon
ground seeds of 5 green cardamom pods
2 ground cloves
8 tbsp olive oil
For the millet:
120 g millet
50 ml coconut milk
ground seeds of 4 green cardamom pods
Preparation:
1. Preheat the oven to 220 ° C (convection). Halve the potatoes with their peel lengthways, cut the beetroot into approx. 1 cm thick slices, the carrots into approx. 2 cm thick pieces, and the mushrooms and onions into large pieces. Put everything on the bottom of a saucepan. Spread the plum jam on one side of the saucepan and spread a few strips over the beetroot slices. Place the thyme stalks on top.
2. Mix the spices with the oil well and let it steep for 10 minutes. Then spread over the vegetables and brush the beetroot slices with the seasoning oil, add a little salt and pepper to everything.
3. The casserole is now placed on the middle rail (wire shelf) in the oven for approx. 25 to 30 minutes. Use your experience, every stove is different. In between, stir the vegetables with a spoon (but not the beetroot slices!) So that the oil is well distributed. Brush the beetroot slices with the oil from the saucepan.
4. While the vegetables are in the oven, cook the millet according to the instructions on the packet and mix with the coconut milk and the ground cardamom while still warm. To keep the millet warm, leave the lid on the pot.
5. Arrange the vegetables and millet on the plates. Add 2 tablespoons of boiling water to the stock in the saucepan and stir well. Season to taste with salt and pepper. Pour some of this sauce over the millet and serve.
